Pumpkin breakfast

What you need: 200 g of raw pumpkin ( weighed without skin ), 1 tablespoon butter, 1/2 teaspoon finely grated ginger, 200 g white cheese, 3- 4 tablespoons of sugar, 1 tablespoon vanilla sugar, 2 eggs ( separate yolks and white ) about 4 - 5 full tablespoons flour, pinch of cinnamon optional : 1/2 teaspoon grated orange or lemon, frying spray.

PREPARATION

Pumpkin grate with small mesh. Heat the butter in a pan, add the pumpkin and ginger and fry for about 5 - 7 minutes until the pumpkin is tender, cool. Cottage cheese or any other white cheese, mash with a fork, add sugar, vanilla sugar and egg yolks. Stir in pumpkin. Beat the whites to foam and add to the mass of cheese - pumpkin with sieved flour (4 tablespoons), cinnamon and orange peel (if we use it). Gently mix (mass to be a dense, if necessary, add the remaining flour - mass density depends, among other things depending on what cheese we use, you can try to fry a pancake to the test). Heat a frying pan and spread frying oil spray, apply a portion (a spoonful) of mass, flatten it on the surface of the pan and fry for about a minute, turn over pancakes over and cook for another half-minute or until lightly browned.
